Coffee - How to Brew a Great Coffee Machine Cup

June 13th, 2008 WesleyJohnson Posted in Food and Drinks No Comments »

Brewing a great cup of coffee with a basic coffee machine is possible. You don’t need a thousand dollar espresso master to be an at-home barista. However, brewing a tasty coffee takes work and preparation. To learn more about how to brew a great machine cup of coffee, keep reading.

Clean Machine

Start your brewing process by making sure your machine is clean. You should be cleaning out your coffee pot with soap and water after every use and making sure that you rinse it out well. You don’t want to leave behind any used coffee grounds or the bitter taste of previously brewed coffee on the inside the machine.

Ideally, your pot should be thoroughly clean and decalcified or descaled at least once a month. To do this, you can use a mild solution of lemon and water or a specific descaling product designed for coffee machines.

Clean Tools

Next, make sure your coffee preparation tools are also clean. This includes your reusable filter container and coffee spoon. Most coffee brewers use the same coffee spoon over and over, going as far as to store the scoop inside the coffee container. However, the metal or plastic from your scoop can react with the coffee and affect its natural flavor, so avoid doing this. Instead, store it in a clean area perhaps with or near your other silverware.

Filtered Water

Try using filtered or pure water the next time you brew a pot of coffee and note the difference when compared to tap water. By removing sediment, minerals and other taste-affecting particles, you can ensure the pure water you’ll be using won’t affect the taste of your brew.

Many coffee machines come with water filters. If yours includes a filter, remember to clean it and replace it on a regular basis to avoid build-up or calcification.

Additionally, some people also love the clean taste of distilled water, using their own countertop water distiller. Using home distilled water can significantly improve the taste of coffee.

Properly Stored Coffee

Coffee should be stored in a dark place at room or refrigerator temperature. Freezing your coffee may make it last longer, but it can also negatively affect the taste.

So, instead of buying your coffee in bulk and freezing it, buy freshly roasted coffee and use it within the week. Find a local roaster in your area and go directly to the source for that truly fresh taste.

Freshly Ground

Ideally, you should be buying whole ground coffee and grinding your coffee beans immediately before you start brewing. This will lock in freshness and keep your coffee from going stale.

When grinding, remember that how fine you grind the coffee will affect the taste. If coffee is too finely ground, it will taste bitter, but if it’s not ground enough, it will taste flat.

Good Measurements

A good measurement ratio is 1 to 2 tablespoons of ground coffee for every six ounces of water. Using much more than that will give the coffee a taste that is too strong for most.

Get Healthy With Some Fruity Fun

June 12th, 2008 StephanieLee Posted in Food and Drinks No Comments »

It can often be difficult to factor fruit into your diet, especially if you are a determined junk food addict. However, you do need to eat a wide range of fresh fruit if you want to live a full, healthy life.

Fortunately there are lots of innovative ways to introduce some fruity fun into your life.

Blend it up

If you own a blender – and it doesn’t have to be a top-of-the-range model – you can start making delicious smoothies straight away.

Don’t be afraid to experiment with the selection of fruits and berries in your smoothies. A combination of bananas, a mango and a chopped apple makes a wonderful and nutritious banana smoothie, while blackberries, blueberries and strawberries can also be blended together to make a tasty mixed berry drink.

The choice really is yours. Making smoothies is a great way to introduce healthier foods to your diet, because you can decide which ingredients suit your tastes. If you have any specific health complaints (for example, cranberries can ease the symptoms of cystitis), you can easily blend the appropriate fruits into your smoothie for an extra-healthy boost.

Cooking to keep the goodness in

In the case of many fruits and vegetables, cooking destroys vital nutrients. However, apples and pears become easier to digest if you roast them gently in the oven. Sprinkle on a little water to help the cooking process, and dust them with cinnamon to create a deliciously sweet snack.

Other fruits that can be cooked include pineapples and even strawberries. Stuck on a bamboo kebab skewer and lightly grilled, these make a wonderful warm dessert, especially when served with a little natural yoghurt.

When you’re heating fruits, do remember not to cook them to death, as this will destroy many of the enzymes that help keep your body healthy. You should also make sure you include a mixture of cooked and raw fruits in your diet.

How fruit helps

A diet that includes a wide selection of fruits is very important if your body is to function properly. Fresh and dried fruits can ease the symptoms of constipation, high blood pressure, osteoporosis and problems with memory and concentration.

As fruits are a valuable source of natural sugars, they also help to keep your energy levels stable and constant throughout the day, thereby promoting healthy sleep and combating insomnia.

Berries are particularly high in antioxidants and can help the body fight off a number of eye problems. For example, blepharitis is an inflammation of the eyelids which can be eased by eating raspberries and drinking tea made from raspberry leaves.

If you want to get rid of unsightly dark circles under the eyes, cranberries, blackberries and blueberries can all improve liver function and make these circles fade.

So whether you blend your favourite fruits together to make a sumptuous smoothie or sprinkle a few strawberries on to your porridge for a brilliant breakfast, the number of ways to get fruit into your diet is limited only by your imagination.

Snow, sleet, or hail cannot slow down the die hard griller as there is nothing much that can compare to the flavor that food gets from being grilled, especially when it comes from a smoker grill. A lot of the higher end department stores are known for carrying the viking smoker grill and you can generally find them in a lot of the different home improvement stores as they always have a wide variety of grills available for purchase all throughout the year.

Another place that is perfect for buying that special viking smoker grill is online as there are many retailers that are offering these for purchase over the Internet. But one thing that you will want to keep in mind is that you are going to have to pay for shipment costs, which can add up to be a good bit of money if you are not careful.

Make sure that you are comparing different sites and different companies to make sure that you are not only getting the best deal on the original purchase price but also on the shipping costs. Keeping your eye out will allow you to get the best deal possible for the viking smoker grill that you have always secretly wanted. Oh So Sweet Fudge Made Easy

June 12th, 2008 GuidoNussbaum Posted in Food and Drinks No Comments »

While I am sure that other people make and eat fudge I will always associate it with Scotland, a land of people notorious for their sweet tooth. Fudge is a sort of soft toffee, and the somewhat grainier version called tablet is also very popular. These recipes are handed down from generation to generation and in a country where the weather isn’t always as bright as it might be many a rainy afternoon is spent making sweeties.

Although often made with the ‘help’ of small children the cooking process needs a lot of care as you are dealing with very high temperatures and very sticky ingredients.

How to Enjoy an Authentic Mexican Christmas

June 12th, 2008 AnnieDubois Posted in Food and Drinks No Comments »

Ever culture has a different way of celebrating the Christmas season, and Mexico is no different. With the wonderful traditions, you will find an authentic Mexican Christmas is a thing of joy and wonder involving the whole family and lasting considerably longer than one or two days.

December 16th is the start of Posada. Posada celebrates and follows the journey of Joseph and Mary on their travels from Nazareth to Bethlehem. Two children after dark each night carry two small, pine cones that have been decorated to represent Joseph and Mary on the burro. There is a procession each night with the children knocking on a random door asking for lodgings for the family.

At this point, the residents threaten harm to the family if they do not move on, and obviously, this leaves the family pleading for a safe refuge. The house members will again threaten the traveling couple, but then the head of the house will realize who the couple is, and throwing open the doors, will greet and welcome the couple with open arms.

Everyone will kneel around the Nacimiento or the manager scene, and will sing glorious songs, Ave Marias, and of course, offer a prayer. Upon Christmas Eve, adding a new verse to the Ave Marias indicates that the birth is under way, and at midnight, fireworks announce the birth of Christ. There is a lot of wondrous celebration, and the whole family eats, drinks, and prays welcoming the Christ Child to the world.

Of course, if you are celebrating an authentic Mexican Christmas, you will want to have the best in costumes and foods. Delectable cuisine is a must at a celebration, and this is cuisine you will find absolutely delicious and wonderful. Filled with menudo, atole, rice, tamales, and other fine dishes, this is a holiday like no other.

Here are is a favorite from my own kitchen. What would you like to add?

Sweet Rice or Arroz Dulce

3/4 cup of rice

1/2 cup of sugar

1 teaspoon of Mexican vanilla or real vanilla

4 cups of whole milk

1 cup of cream

1/4 teaspoon of salt

Briefly scald the whole milk. Place the rice into one of those deep baking dishes, pour the scalded milk over the rice making sure to cover thoroughly, and bake in a 275 degree oven for roughly 3 hours. You can adjust as needed for time and temperature. The rice at this point should be soft. You will want to stir about every 10 minutes for the first house to help in preventing sticking. Also, you can add more scalded milk if needed.

Take out of the oven about 30 minutes before it is completed. Add the sugar, vanilla, cream, and stir thoroughly. Continue baking to completion.

Celebrating a Mexican Christmas or Posada would not be complete without adding this delicious sweet rice to the table. Children as well as adults love this rice dish with a sweet kick. Celebrating the holiday season has never been so easy or so absolutely scrumptious. In fact, this recipe also makes a wonderful dessert for special occasions all year long. Feliz Navidad!

Cooking on an Out Door Grill

June 12th, 2008 GuidoNussbaum Posted in Food and Drinks No Comments »

Man has been outdoors for many thousands of years, but the outdoor grill came along later with the iron age. Nowadays there are hundred of types available from permanent structures, portable barbeques, fire pits and even the disposable type that you pick up outside your local petrol station. Which ever type you use I can guarantee that food cooked out of doors tastes better than any cooked in an indoor kitchen - if cooked properly that is and not burnt on the outside an draw in the middle. The trick is to get your fire started early and cook slowly. If using charcoal it is ready when the coals are glowing under a grey layer to provide a constant heat, not when flames are leaping.

Fish Dinner

4 Fish fillets or steaks, Trout or other fish fillets, Salmon Steaks or Tuna Steaks

1 large sweet Bell Pepper, any color, deseeded and cut into thin strips

1 cup sliced mushrooms

2-3 largish potatoes, sliced thinly

1/2 cup chopped onions

4 Tablespoons of butter, low fat spread or olive oil

Salt and Pepper, to taste

You may also wish to add some herbs – thyme is good.

Divide the vegetables into 4 equal portions. Take half of each portion and place onto 4 sheets of heavy duty aluminum foil. Place the fish onto the bed of vegetables, and put the butter or olive oil on top of the fish. Herbs, salt and pepper to taste. Then add the other half of each portion of the vegetables on top of the fish. Roll the top down snug, and fold the edges in tightly to form a nice solid parcel. Place directly above hot coals for 8 - 10 minutes. Then turn the parcels and wait another 8 - 10 minutes. Remove from the grill, open with care as there will be lots of lovely juices.

Chicken Dinner

Similar parcels can be made using a chicken breast , onions, barbeque sauce, green beans and perhaps some mixed herbs. If the breast is very thick try and flatten it a little to ensure that it cooks right through. This can be accompanied by rice or pasta cooked in a Dutch oven placed in the hot coals.

Turkey Burgers for 4 or 5 people

These don’t have to be made with turkey of course – chicken or pork will be just as enjoyable.

1 large mild onion

3 cups fresh ground turkey

1 tsp garlic powder or a finely chopped clove of garlic

2 teaspoons of dried parsley flakes or a little fresh cilentro

1 teaspoon of salt

2 tablespoons of olive oil

Hamburger buns, barbeque sauce and salad to serve.

Method

Peel and chop onions quite small. Heat of olive oil in skillet and Add onions, a pinch of salt, garlic powder, and black pepper to taste. Stir onions and allow them to sweat then continue cooking until a light brown edge forms on the onions. Remove pan from stove and set aside. Add garlic powder, parsley flakes or other herbs, and salt then mix thoroughly together with ground turkey. Add the cooked onions to the ground turkey mix. Form the meat mix into 4 to 5 patties of about 1/4 pound each. Spray skillet with cooking spray and allow to re-heat, then add the burgers. Make sure they fit in the skillet without touching. Cook about 5 to 6 minutes on each side until clear juices run when pressed with a spatula. Serve in buns with salad and barbecue sauce.

Variations – you may want to add a chunk of cheese into the middle of each burger.

Pork or chicken burgers can benefit from the addition of a little chopped bacon.

If you find yourself needing a soda, chocolate or even tea every few hours you may actually have a caffeine addiction. Many people haven’t even heard of this but it is real and it does exist in more people then it is documented. Most believe they can quit at any time, but the reality of them actually doing it is another story. Can you stop having your daily caffeine or are do you have a caffeine addiction?

Caffeine addiction is just as hard to break as any other addiction, if not more because you have it widely accessible and it is legal to have. Enter a store and look straight down the aisles, you are sure to see an entire rack of nothing but chocolate candy, donuts and in the freezer side you’ll find soft drinks galore, chocolate shakes, teas, coffee and even chocolate milk. How easy is it just to walk away from all this? It isn’t.

Quick and Easy Low Calorie Vegetarian Recipes

June 11th, 2008 GuidoNussbaum Posted in Food and Drinks No Comments »

The shops these days are full of all sorts of goodies suitable for the vegetarian. So longer do you have to satisfy yourself with an omelette or salad. And because there is such choice you can choose low calorie options.

Also there are now a number of meat substitutes if you wan to go that way. Vegetarian bacon – yes really – look in the frozen food cabinet – adds that something to lots of dishes and I frequently use it, even when cooking for omnivores.

Rice Salad

This has quite a long list of ingredients, but is still quick and easy.

I haven’t given amounts as you can alter them to suit what you have available and how many diners there are.

Cold cooked rice – a large cupful per person

Pineapple chunks

Vegetarian bacon, 3 rashers per person

A deseeded, finely sliced chilli

Some coriander or basil

A few salted cashews or dry roasted peanuts ( too many puts the calorie count up of course.)

Juice of lime or lemon

Crisply fried onion

Cooked vegetables such as sweet corn, peas, asparagus pieces and snowpeas.

Mix together the rice, chilli and pineapple. Fry the vegetarian bacon rashers in a non stick pan. They take only seconds so keep an eye on them. Either fry your onions, sliced thinly or reheat previously fried ones. Add the cooked vegetables and the nuts to the rice mixture. Add a squeeze of lemon or lime juice. Crumble the bacon rashers and mix in. Arrange on a plate. Decorate with the chopped herbs and the crispy onion pieces. Non vegetarians might want some prawns or cooked flaked fish in place of the bacon pieces.

No Oil Lemon and Parsley Salad Dressing

There isn’t much point in having a salad if you cover it in high fat dressing, but it does taste good. Well so does this and there is absolutely no guilt attached.
